A few years ago one of my good friends Rob came to visit me in Japan, when he went back to Canada he brought back a Japanese Knife for his Dad’s Christmas present. Japan has quite a history of top quality craftsmanship when it comes to swords and knives. So if you want one of the best Japanese knives you should choose one that taps into the long history of craftsmanship.

I think we all know about the quality of the Katana or Samurai Sword, check out this video of the modern day Samurai Isao Machii cutting though steel objects without even leaving a scratch on his sword.

So when looking for an Amazing Japanese knife we should look at the Katana first. Ecchu Go Umanosuke Yoshihiro was considered one of the greatest sword smiths of all time! He was making swords around the year 1550, he died at a relatively young age between 27 -30 years old. His swords are considered some of the best ever made and since he died young few were produced making them very valuable.

The rarity of his swords have inspired a quote in Japan “One never sees a ghost or a Go.” Go referring to Yoshihiro’s swords of course, named after him. This originated because Yoshihiro’s swords were in such demand that all of the daimyo (powerful territorial lords) tried to acquire one for themselves. Since they were so difficult to find people said “Finding Yoshihiro’s sword is like finding ghost.”

So what does this have to do with modern Japanese knives?

Yoshihiro passed down his knowledge to his students, which in turn passed them down for over 500 years! Now you can buy high quality hand crafted knives that are created with the same techniques passed down for hundreds of years.

Now you can have a piece of Japanese history in your kitchen!
